At the Recipe Club last night, discussion turned to Nila's wonderful bread. This is amazing bread and it was suggested we get her permission to post her recipe...which she generously has agreed to. So here you go. AND if you want to order the
9 grain cracked cereal and
the vital wheat gluton that she orders, use the links attached to those items above. Even if you think you don't like whole wheat bread, I promise you, you will like this one!

| 3 cups | | water | | | 1-1/2 Tbs | | yeast | | | 1/4 cup | | sugar | | | 1 cup | | vital wheat gluten flour | | | 1 Tbs | | salt | | | 1/3 cups | | canola oil | | | 1 cups | | 9 grain cracked cereal | | | 1/2 cup | | sunflower seeds | | | 1/8 cup | | sesame seeds | | | 1/8 cup | | millet seeds | | | 4 cups | | wheat berries ground | | | |

| 1 | Put warm water into the bosch bowl. Dissove in the sugar. Then sprinkle in the yeast and allow the yeast to rise for 15 minutes | | 2 | Combine the high gluten flour, salt, oil, cracked cereal and seeds and add to the yeast mixture and allow to soak. DO NOT MIX....JUST LAY IT ONTO OF THE YEAST MIXTURE | | 3 | Grind 4 cups of the wheat berries on fine. | | 4 | Add 2-1/2 cups of the ground wheat flour and knead for 1 minute. | | 5 | Add 1/2 cups of the ground wheat flour and knead for 1 minute. | | 6 | Add 1/2 cups more of the ground wheat until the desired consistency is met. | | 7 | You may have to add up to 1/2 cup more of the flour. Leave 1/8 cup nearby just in case. | | 8 | Knead for 7 minutes.....This will equal approx 4-1/8 cups of wheat total. You may or may not need the full amount, depending on the humidity in the air. But you need to feel that the dough is not tacky and also not dry. | | 9 | Divide into 3 loaves and place in one-pound bread pans. allow to rise for 1 hour. The dough should have risen to over the edges of the pan | | 10 | Bake in a preheated 375° oven for 30-35 minutes. You can add a pan of water under the rack where you will put your bread loaves...so that the bread gets extra moisture while it cooks. | |
