Eggs

Spaetzle by Nissa

4 eggs

1-teaspoon salt

2 cups all purpose flour

¼ cup water

Wisk the eggs and salt together until smooth. Add the flour 1 cup at a time and mix well. Add the water with the last cup of flour. The dough should be thick and will need to be spooned out of the bowl.

Wisk the dough for 5 minutes or us your Kitchenaid mixer with the paddle attachment and mix for 3 minutes. You should see small bubbles form in the dough. While the dough is mixing, bring a large pot of salted water to a light boil.

To form the spaetzle you can us a ricer, a colander, or a spaetzle maker. You want something with small holes for the dough to be pushed through. Fill the ricer (or tool of your choice) with a couple of spoons of dough. Dip in the hot water and press the dough out. Gentle stir the spaetzle a bit so they don’t clump together. Cook the spaetzle for 2 to 3 minutes, scoop out with a strainer and put in a serving bowl.

After all the spaetzle is cooked, you can sauté with some butter, or serve with gravy. You can add any topping of your choice (my kids like it with cheese).

Cochran Quiche by Shelly

1 pie crust
3 xl eggs
1cup real mayo
1 cup milk
3 Tab flour
a dash of salt and pepper
4 oz swiss cheese
4 oz of crushed bacon
handful of broccoli
or 4 oz of any other meat /veggie combo

Put eggs,milk,mayo,flour,salt and pepper in mixer. Mix until smooth
place swiss cheese and any filling in pie crust. Pour egg mixture on top.

Place in oven at 350 for about 40 min-1 hour. The top should rise and crack a little. When you shake it the middle should not jiggle.

And btw I was planning on going to the egg recipe night since it was during spring break but when on vacation i get totally out of synch and planned to make dinner for my parents that night....but here is what I was going to make.

1 doz. boiled eggs, halved and yolk removed
3-4 pieces bacon, cooked and crumbled (2 tbsp reserved)
2-3 green onions, chopped (1 tbsp reserved)
mayo
Dijon mustard
salt and pepper to taste

Mash cooked egg yolks in med. sized bowl with a fork. Add mayo until consistency is smooth (not too creamy), add just a little mustard for taste. Mix in bacon, green onion, and salt and pepper. Scoop mixture into eggs. Top with remaining bacon and green onion. Sprinkle with paprika if desired.
